Chocolate Chip-Coconut Oatmeal Cookies

These are absolutely delicious - especially if you are a fan of the "coconut-chocolate" mix of flavors. Enjoy!

Chocolate Chip-Coconut Oatmeal Cookies

Just out of the oven!
Ingredients:
-1 3/4 cups all purpose flour
-1 tsp baking soda
-1/2 tsp salt
-2 cups oats
-1 cup vegan butter at room temperature
-1 cup light brown sugar, packed
-1/2 cup milk substitute (I used unsweetened oat milk)
-1 tbsp lemon juice
-1 tbsp vanilla extract
-1 cup unsweetened shredded coconut 

-1 cup semi-sweet chocolate chips

Method:
Preheat the oven to 375 degrees. Combine dry ingredients (flour, baking soda, salt and oats).


I made mine pretty big - maybe 1/3 cup of batter per cookie
Cream the vegan butter with the sugar until light and fluffy, then beat in the milk, lemon juice and vanilla. Mix dry ingredients gradually with the creamed mixture. Stir in chocolate chips and coconut.

Scoop cookies onto a cookie sheet. Bake one sheet at a time for 10 -12 minutes, just until brown around the edges.

Remove from oven, and cool on racks.
